Tortelli di zucca (homemade pasta with pumpkin filling), agnolini in brodo (homemade consomme with filled pasta), risotto alla pilota (rice and meat dish) cannot miss on a restaurant’s table, in the several trattorias and alongside the Mantuan wine and taste road. The cotechino, polenta (mashed maize cream) with donkey meat, cold meat dishes, such as the garlic salami are traditional winter dishes of the Mantua region. The symbol of Mantua gastronomy is the sbrisolona cake.
